Laura’s Carrot Cake

20170119_133511Co-Farmer Laura has been working in the Church Farm Café kitchen on Thursdays with Chris.  She especially enjoys making carrot cake and would like to share her recipe:

Carrot Cake

2 tsp cinnamon
300g self-raising flour
1 tsp baking powder
200g soft brown sugar
4 eggs
250 ml vegetable oil
200g grated carrot

Mix all ingredients and bake at 180° for about 40 minutes. Top with your favourite icing, maybe cream cheese.



Feel Good February

Rural Care at Church Farm is embarking on ’Feel Good February.’  With eating better, being more active and generally living healthier lives being the focus to the start of many people’s year, we thought we would start an initiative here.

For 4 weeks we are going to look at 4 different areas that we feel will help us to feel good. We will be focusing on:

  • Being active
  • Healthy minds
  • Eating well
  • Positive lifestyles

This week we start with ‘being active.’  We feel that all of our Co-Farmers are already making a positive choice to come to Rural Care and be active. We are looking at the tasks and activities we get involved in on a day to day basis, and thinking about how active they are making us.

We have decided that feeding the sheep and mucking out the chickens are pretty active tasks and involve a lot of walking, pushing wheelbarrows and using our body physically, whether that be our arms or legs.  We have given the tasks a score from 1-5, 5 being a very active task and 1 being a not so active task. The Co-Farmers are being asked to think now about the tasks and activities they choose to be involved in, and then to try to achieve a score of 8-10 per day. We hope that this will encourage everyone to be more aware of how active they are and perhaps choose to be more active.
